Kaido Sushi Bar is a unique restaurant in Valencia. From the hand of Ulises Menezo and Yoshikazu Yanome, traditional Japanese haute cuisine is combined with excellence with Mediterranean products. Only 10 people per service. Not one more. Why? Because this unique space must be savored. Every nuance, every surprise, every ingredient, every service will be a unique occasion to enjoy. Japanese by birth and training. Graduate in Economics and qualified cook by the AJSA (All Japan Sushi Association). After more than 10 years cooking in Japan, he decided to travel to Spain so that his cooking could be known in our country. After a stay in Malaga, in the restaurant Zenart, he decided to undertake a new adventure in the Tastem Group, of Ulises Menezo. Already in the Valencian team he won the prize for the best sushiman in Spain and, later, he achieved the fifth place in the world Sushi Challenge organized by Norge.
JOAQUÍN COLLADO MASÓ
He began his career as head of the room and in charge of the winery “El café de la Pedrera”, located on the first floor of Gaudi’s Edificio La Pedrera, together with chefs Eugeni De Diego and Miguel Angel Mayor, two former members of El Bulli. In 2016 he travelled to Valencia with Miguel Ángel Mayor to manage the old Alma del Temple, with which he won a Michelin Star and a Repsol Sun. He also managed the cultural-gastronomic center Convent Carmen. Finally, in 2020, he joined the Tastem Group.
We face the production of the sea in an honest way, reaching (at the forefront with consummate skill) the maximum in the art of Sushi. We take care of selecting seasonal products.
